The golden sunlight of our terroir, created where you truly strive to make something exceptional. SOVA NOVA is a sauvignon blanc that deviates from usual expectations – made from hand-picked grapes at full ripeness, with an emphasis on complexity, maturity and local character.
Unlike the usual green apple notes, here we get candied fruit and tropical mango tones. On the palate: full body, soft acidity, acacia nuances and layered harmony.
The grapes, together with the stems, are pressed in an inert press (maceration 5-6 hours). Fermentation takes place at 14-15°C, and the wine then ages for 6 months in acacia barrels, bringing additional complexity.
The ideal serving temperature is 14°C. A wine that demands attention – for moments of introspective peace or evenings with close friends.
It pairs exceptionally well with strong, mature cheeses, creamy and nutty dishes. Its balance of maturity and exoticism carries dishes with richer texture and aroma.
